Anicca collaboration with Cloudwater Brew Co. nearly 2 years in the making! This saison brewed with apples aged in oak barrels (7.5%) was made with apples from Mercier Orchard, local honey from the UGA Honey Bee Lab, Dayspring Farms wheat, and our house culture. The beer aged in oak barrels for over a year.

Our shared philosophies with Cloudwater Brewing Co from Manchester, England inspired the direction of this rustic Saison. Borrowing from both our+ regional flavors and with a seasonal lenses, we used apples from Mercier Orchards’ 2017 harvest. After 15 months in oak with our house yeast and bacteria, we bottled conditioned with honey from Athens, GA.
